This is a collection of terms commonly used in describing restaurant equipment parts and their function.

Glossary of Restaurant Equipment Parts - E

E-ring

The E Type Snap Ring (also known as the “E-Ring” or ring clip) is one of the most widely used types of external retaining ring within restaurant equipment components. It fits on shafts or tubes that have grooves on them and is easily installed and removed.

Elbow

An elbow is installed between two lengths of pipe (or tubing) to allow a change of direction, usually a 90° or 45° angle; 22.5° elbows are also available. The ends may be machined for butt welding, threaded (usually female), or socketed. When the ends differ in size, it is known as a reducing (or reducer) elbow.

Electrode

An electrode is an electrical conductor used to make contact with a nonmetallic part of a circuit (e.g. a semiconductor, an electrolyte, a vacuum or air).

Element

A heating element converts electrical energy into heat through the process of Joule heating. Electric current through the element encounters resistance, resulting in heating of the element. This process is independent of the direction of current.

Emitter

An emitter is a device which emits charged particles including cathode, or negative electrode, in a vacuum tube or diode, anode, or positive electrode, in certain applications based on the emission of ions from a solid surface; or commonly, one of the three terminals of a bipolar transistor.

Encoder

An encoder is a sensor which turns a position into an electronic signal. There are two forms:

  • Absolute encoders give an absolute position value.
  • Incremental encoders count movement rather than position. With detection of a datum position and the use of a counter, an absolute position may be derived.

The position may be measured as either linear or angular position:

  • A Linear encoder converts linear position to an electronic signal
  • A Rotary encoder converts rotary position to an electronic signal

Energy Star

Energy Star (trademarked ENERGY STAR) is a program run by the U.S. Environmental Protection Agency (EPA) and U.S. Department of Energy (DOE) that promotes energy efficiency. Energy Star provides information on the energy consumption of products and devices using standardized methods. The Energy Star label, can be found on more than 75 different product categories.

EPROM

An EPROM is erasable programmable read-only memory on a computer chip that retains its data when its power supply is switched off (non-volatile memory). An EPROM can be erased and reprogrammed

Ethernet

Ethernet is a means of connecting computerized equipment and other network devices in a physical space. This is often referred to as a local area network (LAN) which ultimately may connect to a wide area network (WAN) -- the Internet.

Ethernet cables are a type of network cable. They are designed to work with Ethernet ports. Ethernet ports can found be on many IOT and network-enabled devices. Ethernet cables look similar to phone cables but he connector is slightly larger than a phone cable’s connector and has eight wires instead of four.

Evaporator

An evaporator is a device used in a process to turn the liquid form of a chemical substance such as water into its gaseous form (vapor). The liquid is evaporated, or vaporized, into a gas form of the targeted substance in that process.

One kind of evaporator is a kind of radiator coil used in a closed compressor driven circulation of a liquid coolant. That is called an air-conditioning system (A/C) or refrigeration system allowing a compressed cooling chemical, such as R-22 (Freon) or R-410A, to evaporate/vaporize from liquid to gas within the system while absorbing heat from the enclosed cooled area (for example, a refrigerator or indoor room) in the process. This works in the closed A/C or refrigeration system with a condenser radiator coil that exchanges the heat from the coolant into the ambient environment.

Exhaust

An exhaust or exhaust system is used for venting gases from cooking equipment. The exhaust is part of a system designed to vent hot gases, steam and smoke from a stove, oven or boiler to the exterior or into a supplemental vented hood . An exhaust my be vertical or channeled, ensuring that hot gases flow smoothly by drawing air into and out of the combustion system through convection, or they may be fan forced.

Extrusion

Extrusion is frequently used in foodservice equipment. An extruding device is typically a large, rotating screw tightly fitting within a stationary barrel, at the end of which may be a dye. This device is called an "extruder". Extrusion is commonly seen in the preparation of pastas, soft ice cream and bakery products, and is also common in ice and condiment dispensing equipment.

Expansion Valve

A thermal expansion valve or thermostatic expansion valve (often abbreviated as TEV, TXV, or TX valve) is a component in refrigeration and air conditioning systems that controls the amount of refrigerant released into the evaporator thereby keeping superheat, that is, the difference between the current refrigerant temperature at the evaporator outlet and its saturation temperature at the current pressure, at a stable value, ensuring that the only phase in which the refrigerant leaves the evaporator is vapor, and, at the same time, supplying the evaporator's coils with the optimal amount of liquid refrigerant to achieve the optimal heat exchange rate allowed by that evaporator.

Eyelet

An eyelet (a small grommet) is a ring or edge strip inserted into a hole through thin material, such as sheet metal or composite of carbon fiber, wood or honeycomb. Grommets are generally flared or collared on each side to keep them in place, and are often made of metal, plastic, or rubber. They may be used to prevent tearing or abrasion of the pierced material or protection from abrasion of the insulation on the wire, cable, line being routed through the penetration, and to cover sharp edges of the piercing, or all of the above.
