Blowers are used in restaurant equipment to diffuse heat, aid in convection, and circulate cold air. A blower is a centrifugal fan. It is a mechanical device for moving air or other gases. Blowers often contain a ducted housing to direct outgoing air in a specific direction or across a heat sink; such a fan is also called a "blower fan", or "squirrel-cage fan" (because it looks like a hamster wheel). These fans increase the speed and volume of an air stream through rotating impellers.
A diverter is used in restaurant equipment to deflect or redirect something else, such as a stream of fluid like water, or particles such as cubes or flakes in ice makers, or coffee beans and grounds in brewing equipment. A similar application is a diaphragm in a burner by which the flame and gases are brought together to improve combustion.
An exhaust or exhaust system is used for venting gases from cooking equipment. The exhaust is part of a system designed to vent hot gases, steam and smoke from a stove, oven or boiler to the exterior or into a supplemental vented hood . An exhaust my be vertical or channeled, ensuring that hot gases flow smoothly by drawing air into and out of the combustion system through convection, or they may be fan forced.
