Controls of all kinds are integral parts of restaurant equipment operation. A control is a switch or other device by which a machine is regulated. A control may be manual or automatically operated. An electro-mechanical control typically consists of multiple relays, timers, and/or counters wired together on an enclosure panel. Electro-mechanical control is also referred to simply as "Relay Control", which is a more accurate term since solid state electronic relays, timers, and counters are standard components. Contactors, motor and compressor starters, valves, thermostats, and other output devices are used to turn on/off motors, indicator lights, heating elements, and other components used in the equipment.

Levers are often used with foodservice equipment. For example, a lever is commonly found in beverage, condiment, and ice dispensing equipment where it is used to activate product flow. Coffee urns may use a lever to dispense coffee or hot water for tea. Most soda fountains use levers to dispense soda or other carbonated beverages. The lever is typically located on the front of the fountain and is pressed down to release the beverage into the cup. Two the simplest types of levers used in restaurants are a bottle or can opener which serve to pry off a cap, or punch a hole in a lid.

A pan is any device used as a container or a collector. A pan may refer to a shallow cooking implement used on a burner or in an oven or it may refer to a similar collecting implement used to capture water, condensation, grease, shortening, and other drainage. A pan may also be used to contain processed food items such as meat, fruit and vegetables, and crumbs as they exit a mincer, slicer, or dicer.

Valves are widely used in different restaurant equipment designs. A valve is a device that regulates, directs or controls the flow of a fluid (gases, steam, liquids, fluidized solids, or slurries) by opening, closing, or partially obstructing various passageways. In an open valve, fluid flows in a direction from higher pressure to lower pressure.

Valves may be operated manually, either by a handle, lever, pedal or wheel. Valves may also be automatic, driven by changes in pressure, temperature, or flow, allowing control over a variety of operational requirements.

Because of its versatility, a RATIONAL combi oven replaces several pieces of equipment in your kitchen, including convection ovens, tilting fryers, rotisseries, boilers, deep-fryers, and steamers because it does the work of all of them.

RATIONAL equipment is useful in a wide range of establishment types. From school nutrition, hospitality, or grocery to the independent restaurant looking to better maximize space, many foodservice operators across the industry use combi-ovens in banquet finishing, overnight cooking, mixed loads, baking, sous-vide, breakfast, smoking, and more. It is the perfect all-in-one piece of equipment for schools, hotels, country clubs, and restaurants for preparing meat, fish, poultry, vegetables, eggs, and even breads and desserts.
