A variety of different test kits are used in restaurant operations. A test kit may be as simple as a paper strip that changes color or as complex as an electronic measuring device. Common restaurant test kits include strips to measure water quality such as pH and chlorination. Test kits are also used to measure the shortening breakdown (degradation) of frying oil. More advanced test kits may be used to measure the pressure of incoming water or gas, or the proper function of valves.

In an open valve, fluid flows in a direction from higher pressure to lower pressure.
