Found in all types of restaurant equipment, resistance thermometers, also called Resistance Temperature Detectors (RTDs), are sensors used to measure temperature. Many RTD elements consist of a length of fine wire wrapped around a ceramic or glass core but other constructions are also used. The RTD wire is a pure material, typically platinum, nickel, or copper. The material has an accurate resistance/temperature relationship which is used to provide an indication of temperature. As RTD elements are fragile, they are often housed in protective stainless steel housings and probes.
A thermocouple is a transducer consisting of two different metals welded together at each end; a voltage is produced that is proportional to the difference in temperature between the two junctions (one of which is normally held at a known temperature). Commercial thermocouples are inexpensive, interchangeable, are supplied with standard connectors, and can measure a wide range of temperatures. In contrast to most other methods of temperature measurement, thermocouples are self powered and require no external form of excitation.
