Condensation occurs when water is changed from it's gaseous form (water vapor) into liquid as it passes over the evaporator coil. Typically this can occur when warm air comes into contact with cold surfaces where water droplets will form. A condensate drain system is the exit route for this moisture as is collects in condensate the pan, and out through the condensate drain line.
The purpose of the evaporator is to extract heat from the ambient environment (such as the space inside of a refrigerator/freezer/walk-in) allowing that space to cool to a desired temperature which is controlled by a thermostat.
