Steam injectors are used to provide humidity within the cooking compartment of cobmi-ovens and other restaurant equipment, as well as to provide high heat sanitizing in dish washing systems. A steam injector is typically used to deliver cold water to a boiler against its own pressure using its own live or exhaust steam, replacing a mechanical pump. Other types of injectors may use alternate pressurized gases or fluids such as air.
